Oat and Rye Bread


  • 1 1/2 cups boiling water
  • 3/4 cup old fashioned rolled oats
  • 1/4 cup butter or oil
  • 6 tbsp packed brown sugar
  • 1 1/2 tsp salt
  • 1 cup stone ground rye flour
  • 2 1/4 cups bread flour
  • 1/2 cup nonfat dry milk
  • 2 tsp rapid-rising or active dry yeast


Pour boiling water into bread machine pan, and then add rolled oats. Let set for approx. 45 minutes until mixture cools to room temp. Add remaining ingredients in the order listed. Make an indentation in the dry ingredients and add yeast.  Select dough and press start. When finished, turn dough out, punch down, and divide evenly. Shape into loaves and put in greased loaf pans to rise...about one hour or until doubled. Bake at 350 for approx. 30 minutes or until golden brown.
